Heirloom Oaxacan Black Bean Tostada, from Magdalena’s
The Heirloom Oaxacan Black Bean Tostada is a favorite among Magdalena’s executive customers, who often order upscale dishes for meetings with clients from out of state or overseas, says catering director Paige Rodriguez. Husband and chef, Juan (who recently competed in Fort Worth Magazine’s 2017 Top Chef competition), creates the dish with black beans, pickled cabbage, Cotija cheese and mole verde. Black Angus Tenderloin, Mediterranean-style,

If you’d still like a sandwich, Bistro Louise’s Black Angus tenderloin is a pleasant departure from the staid turkey and ham. The roasted beef tenderloin pairs well with tart lemon slaw, nestled between a homemade brioche bun. Another scoop of lemon slaw and baked root vegetable chips comes on the side.

Roasted Vegetable Millefeuilles, from The Bastion
Roasted Vegetable Millefeuille was one of the first dishes chef and owner Chandra Riccetti served her husband after they were married, and it has since become one of her favorites to serve at meetings. The dish has no meat — just delicate layers of roasted eggplant, zucchini, tomatoes, red onions and herb goat cheese, dressed with a shallot and sherry vinaigrette. For a healthy option, go for Lettuce Cook’s Super Kale Salad. It’s made with the good stuff — organic coconut, cranberries, pumpkin seeds, pine nuts, chia and flax — and dressed with a honey thyme vinaigrette. The salmon adds protein to round out the dish.
“A great balance of high alkaline in the kale and omega-3 in the salmon does the body good,” Chef Josh Peterson says. “We are all about balance at the LC.”
