Husband-and-wife team Travis and Emma Heim began life as fledgling entrepreneurs in the back of a food truck.
Their enterprise has blossomed into a smoke empire.
The restaurateurs will soon open a fourth brick-and-mortar location in the emerging city of Burleson, at 139 W Ellison Street. Grand opening is set for Dec. 2. (An aside: Did you know Burleson has a population of almost 60,000? That’s up from 22,000 in 2000.)
The brand’s notable and delicious bacon burnt ends — better known to the meat memory as bold and blissful bites — will, of course, be on the menu, as well as its array of smoked meats, sides, and rich desserts.
“This project has been years in the making, and we are so thrilled to finally open our doors and serve BBQ lovers in the city of Burleson and Johnson County," the Heims, Travis and Emma, wrote in a statement. “You can expect all of the Heim Barbecue favorites like Bacon Burnt Ends, HEIMburgers, ice cold beer, and craft cocktails in a family friendly, inclusive atmosphere. Thank you for welcoming us into the community we can’t wait to open our doors.”
The HEIMburger is on this writer’s to-do list.
The inside of the new restaurant, which has been designed by Emma, includes a spacious dining area, a welcoming bar, and a newly remodeled interior. A second story rooftop patio boasts a full bar, kitchen, and live stage that offers meat aficionados live music while enjoying some smoked meats.
The grand opening celebration will coincide BTX-Mas, Burleson’s Christmas kickoff hosted by the Burleson Rotary Club. It starts at 6 p.m. with a parade, followed by a tree lighting ceremony and the newfangled drone show at 8 p.m.
Carolers and dancers are scheduled to be in attendance along with Santa himself. The event will take place at the Mayor Vera Calvin Plaza, coincidentally directly in front of Heim BBQ Burleson. A 34-foot-tall Christmas tree covered with more than 20,000 lights will be plugged in.
Heim Barbecue opened its first brick-and-mortar in 2016 in Fort Worth’s Magnolia neighborhood. It also has restaurant in the River District, at 5333 White Settlement Road, and a couple of years ago, it invaded the Dallas market with a place at 3131 West Mockingbird Lane, near Love Field.
